Hippity Hoppity!

Easter is a few weeks away! Time to pull out my trusty carrot cake recipe with cream cheese's time for The Beatrix Potter! Yes, my darling carrot cake cupcake is named after one of my favorite authors. The Beatrix Potter is a super moist carrot cake with swirls of cream cheese frosting. No raisins in my carrot cake, just lots of fresh carrots, honey, and a mix of spices. Handmade marzipan carrot for decoration adds the final touch! Super sweet and perfect for your Easter celebration.
